Confetti Cake Recipe

Ingredients

Cake
1	package	cake mix, yellow
1	package	instant pudding mix, vanilla
4	large	eggs
1	cup	water
1/2	cup	vegetable shortening
1	cup	mini chocolate chips	semi-sweet
Topping
1	cup	miniature marshmallows	coloured
2/3	cup	chocolate frosting
2	tablespoons	mini chocolate chips	semi-sweet

Directions

Preheat oven to 350 F.
Grease and flour 13x9 inch pan.
FOR CAKE:
Combine cake mix, pudding mix, eggs, water and oil in large bowl.
Beat at medium speed with electric mixer for 2 minutes.
Stir in 1 cup miniature chocolate chips.
Pour into pan.
Bake at 350 F for 40-45 minutes or until toothpick inserted in center comes out clean.
FOR TOPPING:
Immediately arrange marshmallows evenly over hot cake.
Place frosting in microwave-safe bowl.
Microwave at HIGH for 25-30 seconds.
Stir until smooth.
Drizzle evenly over marshmallows and cake.
Sprinkle with 2 tablespoons chocolate chips.
Cool completely.
TIP: For ease in cutting, use knife with thin, sharp blade.
Clean knife with paper towl after each slice

New Year Rice Cake Recipe

Ingredients

For 8 servings

- 100 g (3 1/2 oz.) sticky rice flour

- 150 g (5 oz.) rice flour

- 1 glass of water

- 100 g (1/2 cup) sugar

- 3 tbsp. lard

- 2 tbsp. cinnamon tree alcohol (or fruit alcohol)

- 100 g (3 1/2 oz.) dried fruit: jujube, candied orange peel, dates, dried litchis

Method

1. Make a syrup with the water and sugar; let cool.
2. Combine the two flours; combine with the syrup and mix in the lard.
3. Once the mixture is smooth, flavor with the alcohol, then add the dried fruits.
4. Grease a pan that is 18 cm (7") round and 5 cm (2") high and pour in the batter. Steam for about 50 minutes.
5. Let cool, unmold and serve.
